It tastes good enough, and there are some things that taste better the longer you let it sit... in a controlled, cool environment. Like wine. Cheese needs to be aged too, and there's even a kind that has maggots in it to give it a creamy texture and unique flavor.

Some people even eat rotten fish--that's Swedish, I think. Norwegians--what Miss Sigrun is--have a fermented fish dish that's supposed to smell pretty horrible. [ ...and then there's like, infected corn and shark and look let's just not get too far into all the gross stuff humans go "yes, this is delicious, I'm going to consume it and share it with others" at. ]
But it's mostly just eaten fresh, so you don't have to worry about the taste... though day-old bread makes the best french toast.
